Martin Hartwig trained as a chef at Hotel Bullerdieck in Frielingen, then cooked at 2-star restaurant Süllberg in Hamburg with Karl Heinz Hauser and at Schmiedegasthaus Gehrke in Bad Nenndorf. Since 2016, Martin Hartwig has been sous chef at Handwerk, which has held a Guide Michelin star since 2022.
